Bittersweet, Aromatic
Physical Attributes:
- Shape: Small to medium round
- Skin: Yellow background with an orange flush on sun-exposed sides.
- Flesh: Off-white, crumbly
Flavour:
Grassy, candied fruit and tropical aromas with well balanced, bittersweet, aromatic, honeyed juice. Popular for Calvados. Retains some sweetness after fermentation, possibly natural sorbitol.
Neat History:
Identified in the 1750’s in Dieppe, Normandy, France where it has been a staple for cidermaking and brandy for many generations.
